Ikan Kuah Pala Banda

Ikan Kuah Banda Pala is a unique culinary from the Banda Islands, Central Maluku district, Maluku Province.Ikan Kuah Pala Banda is one of the local culinary. RECIPE OF IKAN KUAH PALA BANDA

Ingredients:

½ Kg swordfish / tuna / mackerel, cleaned, cut into pieces
600 ml coconut milk from ½ coconuts
1 ½ teaspoon salt
1 tablespoon of tamarind, dissolved in 50 ml of water, strain
The oil for frying

Ground Spices

6 red onions
5 cloves garlic
4 curly red chilies
3 cm turmeric
2 teaspoons coriander, toasted
1 teaspoon salt
½ teaspoon pepper grains
½ teaspoon flavoring

Seasoning Complement:

4 lime leaves
1 bay leaf
1 stalk lemongrass, white part and crushed
1 small bunch basil, leaves download
½ teaspoon sugar


How to make:
Marinate the fish fillets with salt and acid aqueous solution. Let stand 10 minutes, drain. Fish fry until cooked.
Stir-fry until fragrant spices, bay leaves, lime leaves, lemon grass and galangal. Add coconut milk and sugar, bring to a boil while stirring
